Middle Eastern-Style Cucumber Tomato and Onion Salad

This simple salad is a great way to use summer cucumbers and tomatoes. The lemon and parsley add a lively, fresh taste.

Servings: 4

Ingredients:

  • 1 cucumber
  • 4 tomatoes
  • 1 medium onion
  • 2 tablespoons parsley, chopped (optional)
  • 1 or 2 lemons or limes
  • Salt to taste

Directions:

  1. Chop the cucumber, tomato and onion into bite size pieces and place in a salad bowl.
  2. Add chopped parsley, if desired.
  3. Juice the lime or lemon and pour the juice over the salad. Add salt.
  4. Adjust the amounts of veggies, citrus and salt to your liking.
  5. Let marinate in the refrigerator for at least 30 minutes
